Sticky fingers guaranteed with this wing recipe

  • 1 kg. chicken wings
  • 2 eggs
  • 5 ml. baking soda
  • 4 medium garlic cloves, minced
  • 1-inch knob of fresh ginger, minced or grated
  • 90 ml Courageous Cock sauce
  • 45 ml. Coconut Syrup
  • 45 ml. Raw honey (optional)
  • Sea salt and freshly ground black pepper
  1. Preheat your oven to 230 C.
  2. In a large bowl, combine the eggs, baking soda, and season with salt and pepper to taste; whisk until well-emulsified.
  3. Toss in the chicken wings, making sure they are well coated; remove any excess egg.
  4. Arrange the chicken wings on a wire rack or directly on a baking sheet.
  5. place in the oven and cook for 30 to 35 minutes, turning them every 10 minutes.
  6. In a bowl, combine all the remaining ingredients, and stir well.
  7. Cook the sauce in a large frying pan or wok placed over a medium heat, stirring frequently, until it thickens.
  8. Add the chicken wings to the sauce, toss until well coated, and serve.
